At Fort Arabesque Resort, Spa & Villas, great dining comes down to one thing: real passion. Today, in our Fort People series, we are happy to introduce Chef Rohit Joshi. He brings authentic spices, slow-cooked curries, and comforting flavors from India straight to West Bay's Main Restaurant in Makadi Bay, Hurghada.
Growing up in Amritsar—a city world-famous for its food culture—Rohit learned to cook right at home with his mother. After working in leading luxury hotels across India, Dubai, and Egypt, he now brings those family recipes and comforting flavors to our guests by the Red Sea.

From an Amritsar Kitchen to the Red Sea Coast
Chef Rohit’s love for cooking began in Amritsar, Punjab. If you ask him who the best chef in the world is, he won't name a celebrity—he will tell you it is his mother.
Watching her toast whole spices and simmer sauces for hours taught him that good food cannot be rushed. More importantly, it taught him that cooking is really about taking care of people.
Before joining Fort Arabesque, Chef Rohit built his career in luxury hotels across India and Dubai. Every kitchen gave him new techniques, but his goal never changed: keep the flavors real, honor traditional recipes, and make sure every guest leaves happy.
Culinary Artistry: Simple Ingredients, Honest Flavors
Real Indian food isn't about overpowering heat—it is about balance, fresh herbs, and patience.
Whole Spices Roasted by Hand
A great curry takes time. Chef Rohit gently toasts and grinds whole spices—like cinnamon, green cardamom, cloves, and Kashmiri chilies—simmering gravies slowly so the flavors blend naturally.
Signature Lamb Rogan Josh
If you try one dish, make it the Lamb Rogan Josh. Tender cuts of lamb simmer slowly in a rich gravy made with yogurt, browned onions, and warm spices until the meat is tender and full of flavor.
Cooking That Feels Like Home
For Chef Rohit, every dinner service is personal. He cooks with dedication so that every bite feels comforting, authentic, and memorable.
"The best meals are made with care, passion, and love. When you cook with genuine dedication, people can taste it right away. Food brings people together around the table, and making guests feel welcome at Fort Arabesque is why I love what I do." — Chef Rohit Joshi
